Pecan & Baobab Brownie Slice With Salted Caramel Filling

If you're a fan of making nut milk at home, like we are at Aduna Towers, you've no doubt wondered what to do with all that leftover almond pulp. Aduna Feel Good Triber Ania has come up with the perfect solution! These delicious Pecan & Baobab Brownie Slices contain no refined sugar or grains and are bursting with baobab love. 

Ingredients:

For brownies: 
2 tbsp Aduna Baobab Powder
1 cup dried almond pulp (or ground almonds)
5 tbsp coconut oil, melted 
2 large eggs
1 tsp vanilla powder
1/2 cup chopped pecans
5 tbsp coconut sugar
1/3 cup cacao powder
1 tsp baking soda 
2 tbsp maca powder 

For salted caramel spread: 
8 soft pitted dates (you can soak them in warm water for 5min)
1 tbsp water
dash of vanilla extract
1/2 tsp pink salt

Method:

For salted caramel spread: 
Use a high speed blender to combine all ingredients until smooth. Set aside until ready to use. 

For brownies: 
Preheat the oven to 170C. Line a 20cm x 20cm baking tin with parchment paper (or grease with coconut oil).

Stir together all ingredients in a mixing bowl until well combined and you have a thick, smooth batter. 

Pour the mixture into the prepared tin and bake for 15-20 minutes. 

Leave to cool before cutting into squares and sandwiching together with the salted caramel filling.
