Cucumber Avocado Rolls

These bite size cucumber rolls are the perfect canapés for entertaining this season. Their fresh and vibrant flavours perfectly complement more traditional dishes associated with the festive period, whilst the moringa and nutritional yeast provide an added boost of goodness. As they are gluten-free and vegan they also make a great option for those with dietary requirements. 

Makes 12

INGREDIENTS:

1 tsp Aduna Moringa Powder
1/2 large cucumber
1/2 avocado
1 tsp nutritional yeast flakes
1/2 garlic clove, finely chopped
juice of 1/2 lime
small handful fresh basil leaves
salt and pepper, to taste
smoked paprika, to garnish 

METHOD:

Place all the ingredients except the cucumber and paprika in a food processor and blend until smooth and creamy. 

Wash the cucumber and chop off the ends. Take a potato peeler and peel the cucumber lengthways into long, thin slices. Evenly spread 1 tsp of the avocado mix onto each cucumber slice and carefully roll each one up. 

Garnish with paprika.
