Moringa Lentil Coconut Curry

Made from simple, nourishing ingredients and an array of spices, this fragrant moringa lentil coconut curry recipe is one of our favourite ways to get our moringa fix. Packed with nutrients, it's the perfect dish to make in big batches to either freeze or have for lunch the next day.

Ingredients:

2 tsp Aduna Moringa Powder
1 1/3 cup red lentils
1 red onion
3 garlic cloves
1 knob ginger
1 tsp curry powder
1 tsp turmeric powder
1 tsp cumin seeds
3 cardamon pods, crushed 
1 can coconut milk
2 cups vegetable stock
2 large handfuls spinach
warm chapatti or naan bread, to serve 

Method: 

Heat the olive oil in a frying pan over a medium heat. Add the onions, garlic and ginger and fry for a few minutes until soft. Add all the spices and cook for another few minutes.

Add the lentils and vegetable stock. Bring to the boil, then reduce the heat and simmer for five minutes.

Add the coconut milk and season with salt and pepper. Cook for a further 15-20 minutes stirring regularly until the lentils are cooked. Remove from the heat and stir in the spinach and moringa powder. 

To serve, pour the lentil curry into a warm bowl with the warm chipattis served on a plate alongside.
