Natasha Corrett is one of the country's best vegetarian chefs, a renowned health guru and author of 4 best selling cookbooks. She is a huge advocate of the alkaline diet, which has completely transformed her health and given her a new positive outlook on food. Her website, Honestly Healthy, shares the benefits of an alkaline diet with others and is a platform for recipes, expert advice and a market place for new health trends. 

With the release of her brand new cookbook Honestly Healthy In A Hurry, we caught up with Natasha to find out a little more about her alkaline diet and healthy eating ethos:

1. Tell us about your new book Honestly Healthy In A Hurry. What can Aduna Feel Good Tribers expect?

Honestly Healthy In A Hurry is mostly about my new prep night method that will help save you lots of time and money and reduce your food waste to zero.

On a Sunday I cook up all my vegetables, grains and pulses, make a frittata and some dips. It takes an hour and 15 minutes and means that all the food in your fridge is ready for cooking. From the pre-cooked veg, everything takes a quarter of the time to cook. For example, if you've got roasted sweet potato in your fridge, you can make my sweet potato quinoa risotto in 10 minutes, you can make my sweet potato falafels, you can make the sweet potato porridge. The idea is, you don't have to cook a lot to be able to create loads of delicious meals through the week.

I batch cook as well – I always say my freezer is my best friend. Every other week, I'll make a curry or a daal or a stew or something like that, cook double the amount I want that day and freeze it into portion sizes into freezer bags. I also freeze pesto into ice cube trays, because then you can just pop it out and use it for mixing into pasta, or put it into hummus, or use it as a filling for ravioli.

All the recipes in my new book can be made from pre-cooked veg and/or raw, the recipes show you both weights and you can use the weight charts to apply my method to all your other cook books too.

2. What does an alkaline diet involve and why is it good for us?

It's pretty straightforward really. Acid-forming foods are things we all know we shouldn't eat lots of: processed foods, sugar, meat, alcohol, gluten and dairy. The alkaline diet is all about reducing that stuff to 30% of your diet and increasing natural vegetables, fruits, pulses, grains to make up 70% of your diet.

3. Describe a typical day in food for the Honestly Healthy household?

Nothing is typical in my house! Every day is very different but we always get a lot of veg in. The day usually starts with a green protein smoothie or eggs on toast then lunch is a simple veg salad with a lovely tahini dressing and then dinner is maybe beetroot burgers or a yummy curry or stew. I tend to develop recipes at home a lot so my husband is my guinea pig!

4. What are the main reasons people fall off the wagon with their healthy eating regimes?

Not being prepared. That is why I created this new method, to help me and other people stay prepared even when they’re super busy.

5. What kitchen equipment do you think is really worth investing in?

A good blender - I love my Vitamix SS90 and use it all the time.

6. What are your favourite ways to use Baobab, Moringa & Super-Cacao?

I use baobab for my homemade Apple & Baobab Hot Toddy, because its rich vitamin C content makes for the most perfect immune boosting drink. Aduna Super-Cacao is the crucial ingredient in to my quick and easy Cacao Granola, making it chocolatey and delicious!
