          Lemon & Baobab Chia Pudding with Passion Fruit Cream

          When healthy tastes this good it's easy to stay on track! These zingy little dessert pots from Aduna Triber Natalia are the perfect balance of fresh and light and creamy and indulgent-tasting. Dairy-free, gluten-free, sugar-free but definitely not free from flavour! 

          Serves 4-6


          Lemon chia pudding: 

          1 tsp Aduna Baobab Powder
          1/2 cup chia seeds
          3 cups almond milk
          grated zest of 1 lemon
          freshly squeezed juice from 1 lemon
          1 tsp ashwagandha powder (optional)
          1 tsp vanilla extract
          1/4 cup maple syrup 

          Passion Fruit Cream:
          1 tsp Aduna Baobab Powder
          1 cup soaked cashed nuts
          2 1/2 tsp freeze-dried passion fruit powder (fresh passion fruit can be used too)
          1/2 cup water
          1 tsp vanilla extract
          1 tsp lucuma powder
          1/3 cup maple syrup (Add a little extra if it's not sweet enough for you)


          Mix all the chia pudding ingredients in a jar and put in the fridge for at least 4 hours, or up to overnight.

          Blend all the ingredients for the passion fruit cream until smooth. 

          In a small jar, layer up the chia pudding and passion fruit cream and decorate the top with lemon zest and apricot kernels or almonds.
