Tropical Baobab Trail Mix
Ready-prepared trail mix usually contains unnecessary sugars, additives and sometimes an ingredient or two that we're not that keen on. Luckily, it's so easy to make that nothing needs stand between you and that perfect snack! This tropical baobab coconutty delight is our current favourite. Feel free to mix up the nuts and fruit to suit your tastes!
1 tsp Aduna Baobab Powder
2 cups cashews
1 cup coconut flakes
1 cup dried mango, roughly chopped
½ cup raisins
½ cup pumpkin seeds
½ cup dried mulberries
2 tbsp maple syrup
1 tbsp melted coconut oil
Preheat the oven to 190C.
Combine the cashews, coconut, mango, raisins, pumpkin seeds and dried mulberries in a bowl.
In a smaller bowl, whisk together the baobab, maple syrup and melted coconut oil.
Pour over the trail mix and mix well.
Spread the mix evenly over a lined baking tray and bake for 10-15 minutes, checking and stirring every now and again to ensure it doesn't burn.
