Hardly a weekend goes by when we don't whip up a stack of pancakes! They're one of our favourite breakfasts and definitely don't have to be unhealthy. In this recipe, brown rice flour and oats take the place of refined white flour and blueberries and baobab add an extra fruity flavour. When they're that healthy, a drizzle of maple syrup definitely doesn't hurt!
Ingredients
- 1 tbsp Aduna Baobab Powder
- 1 banana
- ⅓ cup brown rice flour
- 1 cup oats
- 1–1½ cups oat or almond milk
- 2–3 Medjool dates
- ½ cup blueberries
Method
- Add the oats to a blender, grinder or food processor and process until they resemble flour. Set aside.
- Add the dates and milk to the blender and blend until the dates are completely puréed.
- Break the banana into smaller pieces and add to the blender along with the baobab powder and brown rice flour.
- Blend until the mixture is thick and smooth, then stir in the blueberries.
- Heat a little coconut oil in a large frying pan over medium heat.
- Pour approximately ⅓ cup of batter at a time onto the pan, using a spatula to spread into circles.
- Cook for about 2 minutes before carefully flipping and cooking for a further 1–2 minutes.
- Repeat with the remaining batter, adding more oil as needed.
- Serve warm with your favourite toppings. We like a drizzle of date or maple syrup, almond butter and extra berries.
