Often pancakes are little more than refined white flour and dairy and topped with sugars and syrups with absolutely no nutritional value. These yummy, fluffy Moringa Pancakes are made with healthy whole grains and fruit and contain an extra boost of goodness from our mighty moringa powder. No need to save them for a special occasion!
Ingredients:
1/2 tsp Aduna Moringa Powder
1 banana
1/3 cup brown rice flour
1 cup oats
1 1/2 cups non-dairy milk
3 Medjool dates
Method:
Add the oats to a blender and grind down into a flour. Set aside.
Add the dates and non-dairy milk to the blender and blend until the date pieces have been fully broken down.
Add the remaining ingredients to the blender, including the reserved oat flour and blend until thick and smooth.
Add a little coconut oil to a frying pan over medium heat then spoon the batter, half a cup at a time, into the pan and spread into circular pancakes with a spatula.
Cook for approx. 2 minutes, flip with a spatula and cook for a further minute or 2 on the other side.
Repeat, until all the batter is used up. Stack up the pancakes on plates, drizzle with coconut cream, nut butter or your favourite toppings.
