Impress your guests with this delicious and elegant starter – boosted with both our baobab and moringa superfood powders for extra flavour, colour and nutrients. One for your next dinner party!
Ingredients:
1 cup organic mayonnaise
1/4 cup organic Greek style yogurt
1/4 cup organic tomato ketchup
1/2 tsp mild curry powder
pinch of salt, pepper, paprika, cayenne powder
2 ripe avocados
juice from 1 lime
1 clove garlic
4-5 fresh mint leaves
salt & pepper
Top Layer:
handful freshly chopped parsley leaves
handful freshly chopped chives
Method:
Mix together all the ingredients for the first layer, distribute evenly in 6 serving dishes or glasses and refrigerate for 1 hour.
Blend all the ingredients for the second layer, distribute evenly in the 6 cups, on top of the first layer. Refrigerate for another hour.
Cook king prawns for 6-8 min (until they turn pink, but make sure not to over-cook them). When they cool down, decorate each cup with 3 prawns and sprinkle with the freshly chopped parsley and chives. You can also drizzle over a few drops of organic virgin olive oil for extra taste.
