Moringa, Spinach & Asparagus Protein Risotto
This clean green risotto will become your go-to when you want a warm & comforting but healthy meal. It's high in protein, grain-free, vegan and super-charged with our #moringamiracles! Try it with your favourite green vegetables, e.g. broccoli/green beans in place of the asparagus when not in season.
1 tsp Aduna Moringa Powder
250g sunflower seeds, soaked
1 tbsp coconut oil
1 onion, chopped
handful of spinach
8-10 asparagus spears
250ml vegetable broth
Soak sunflower seeds overnight or at least 4 hours in filtered water. Drain and rinse sunflower seeds. Set aside.
Chop the asparagus into small pieces and roughly chop the spinach.
Melt coconut oil in a large pan over medium-high heat. Add onions and sauté until translucent. Add the drained sunflower seeds, vegetable broth and vegetables and leave to simmer until there is no liquid left in the pan.
Add in your veg and your broth slowly and let it simmer until the liquid evaporate.
Remove from heat and mix in the moringa powder before serving with a drizzle of olive oil, lemon juice & a sprinkling of flaky salt.
