This clean green risotto will become your go-to when you want a warm and comforting but healthy meal. It's high in protein, grain-free, vegan and super-charged with our #moringamiracles! Try it with your favourite green vegetables, e.g. broccoli or green beans in place of the asparagus when not in season.
Ingredients
- 1 tsp Aduna Moringa Powder
- 250g sunflower seeds, soaked
- 1 tbsp coconut oil
- 1 onion, chopped
- Handful of spinach
- 8-10 asparagus spears
- 250ml vegetable broth
Method
Soak sunflower seeds overnight or for at least 4 hours in filtered water. Drain and rinse the sunflower seeds, then set aside. Chop the asparagus into small pieces and roughly chop the spinach.
Melt the coconut oil in a large pan over a medium-high heat. Add the onion and sauté until translucent. Add the drained sunflower seeds, vegetable broth and vegetables, and leave to simmer until there is no liquid left in the pan. Add your veg and your broth slowly, and let it simmer until the liquid evaporates.
Remove from heat and mix in the moringa powder before serving with a drizzle of olive oil, a squeeze of lemon juice and a sprinkling of flaky salt.
