Moringa & Mint Choc Chip Porridge

This recipe may not have won the London Porridge Championships (the competition was very steep!) but we definitely think it's a winning recipe! Classic creamy oats get a superfood kick from our mighty moringa and a hint of mint flavour that works perfectly with the indulgent chocolate almond butter sauce. Healthy but decadent! 

Serves one ( with extra sauce)


Mint Choc Chip Porridge:

1 tsp Aduna Moringa Superleaf powder
1/2 cup Rude Health Daily Oats or rolled oats
1 1/2 cups Rude Health Almond Drink
1/2 tbsp cacao nibs, pulsed in the food processor to break down a little
Peppermint extract, to taste (start with a few drops and add more if desired)
pinch of salt
maple syrup (optional)

Chocolate Almond Butter Sauce:

1/4 cup almond butter
1 1/2 Tbsp maple syrup
1 1/2 Tbsp raw cacao powder
pinch of salt
water, to thin

toasted coconut flakes
edible flowers


Place the oats, almond milk and salt in a saucepan over medium heat and bring to a boil. Reduce heat to a simmer and leave to cook, stirring frequently, for 5-8 minutes, until creamy and thickened to your liking. Remove from heat before stirring in the peppermint extract, cacao nibs and moringa powder. Taste and add maple syrup to sweeten if desired. 

For the chocolate almond butter sauce: place all ingredients in a small pan over low heat and whisk to combine. Add water, 1 tbsp at a time until it reaches your desired consistency. 

Spread the chocolate almond butter sauce (you will have extra) on the bottom of a bowl. Spoon over the porridge, sprinkle with toppings and serve immediately.
