We love to make a big batch of these tasty Cacao Energy Balls and store them in the fridge ready for when those sweet cravings strike. The dried fruit, nuts and seeds make them a great source of protein & slow-release energy. But be warned, it's impossible to eat just one!
Ingredients:
4 tbsp Aduna Super Cacao Powder
2 cups pitted dates (soaked in warm water)
1 cup pistachios de-shelled
3/4 cup sunflower seeds
2 tbsp chia seeds
2 tbsp hemp protein (optional)
2 tbsp nut butter of choice
1 tbsp melted coconut oil
Zest of 2 clementines
1 clementine, juiced
Pinch of sea salt
Method:
In a food processor, blend the pistachios into a coarse flour. Remove half of the crushed pistachios and place into a flat bowl for decorating later.
Add the sunflower seeds to the food processor and continue to pulse for 2 minutes.
Zest the 2 clementines then slice in half and juice one. Add the zest and juice along with all the other ingredients and blend until everything is sticky and combined (you may need to scrape down the bowl of the food processor a few times).
Remove the mixture to a bowl. Roll balls out of the mixture with your hands then roll in the reserved chopped pistachios.
Place in the freezer for 30 minutes to set, then store in the fridge in a sealed container ready for your when you need an energy boost.
