Creamy Avocado & Moringa Pasta

Try this super-charged vegan pasta dish that's perfect for a quick weeknight dinner. Spelt pasta is mixed with luscious avocado, creamy cashew yoghurt and our mighty moringa to create a delicious pasta sauce that's full of both flavour and goodness.

Ingredients

  • 1 tbsp Aduna Moringa Powder
  • 2 cups spelt pasta
  • 1 avocado
  • 1 tbsp olive oil
  • ½ garlic clove
  • Pink Himalayan salt, to taste
  • Black pepper, to taste
  • 1 pot cashew yoghurt

To serve:

  • Handful arugula (rocket)
  • Hemp seeds
  • Pumpkin seeds

Method

  1. Cook the pasta as recommended on the package.
  2. Add the avocado, olive oil, garlic, salt, pepper, cashew yoghurt and Aduna Moringa Powder to a blender and mix together until smooth.
  3. Combine the sauce with the cooked pasta and toss until evenly coated.
  4. Top with arugula, hemp seeds and pumpkin seeds.
