Try this super-charged vegan pasta dish that's perfect for a quick weeknight dinner. Spelt pasta is mixed with luscious avocado, creamy cashew yoghurt and our mighty moringa to create a delicious pasta sauce that's full of both flavour and goodness.
Ingredients
- 1 tbsp Aduna Moringa Powder
- 2 cups spelt pasta
- 1 avocado
- 1 tbsp olive oil
- ½ garlic clove
- Pink Himalayan salt, to taste
- Black pepper, to taste
- 1 pot cashew yoghurt
To serve:
- Handful arugula (rocket)
- Hemp seeds
- Pumpkin seeds
Method
- Cook the pasta as recommended on the package.
- Add the avocado, olive oil, garlic, salt, pepper, cashew yoghurt and Aduna Moringa Powder to a blender and mix together until smooth.
- Combine the sauce with the cooked pasta and toss until evenly coated.
- Top with arugula, hemp seeds and pumpkin seeds.
