Raspberry Baobab Smoothie Bowl With Lucuma Cashew Cream

This smoothie bowl by Aduna Triber Leitchy combines creamy cashews with tangy raspberries and our favourite superfruit for the ultimate breakfast. Packed full of protein from the cashews and immune boosting goodness from the fruit, it's guaranteed to keep you sustained until lunchtime. 

Serves 2


Lucuma cashew cream:
50g unsalted cashews, soaked for 3 hours and drained
2 tsp lucuma powder
1/2 tsp vanilla powder
1/2 tsp maple syrup
7 tbsp your favourite nut milk 
1 Medjool date, pitted and roughly chopped

Raspberry baobab smoothie: 
3 tsp Aduna Baobab Powder
70g coconut cream (you can also use the top of a can of coconut milk)
100g frozen raspberries
1 tsp vanilla powder
1/2 tsp maple syrup

To serve (optional): 
handful of raspberries, fresh or frozen
small handful of unsweetened coconut flakes
sprinkle of cacao nibs
1 heaped tsp of almond or cashew butter  


First, make the cashew cream by adding all the ingredients to a blender and blend until smooth and creamy. Transfer to a bowl and set aside. 

Next, make the raspberry smoothie by adding all the ingredients to the same blender and blend until smooth. 

Fill 1 or 2 bowls half with the cashew cream and half with the raspberry smoothie then decorate with the toppings.
