Raw Cinnamon and Raisin Peanut Butter Slices

The combination of peanut butter and chocolate are a tried and tested classic and we absolutely love this healthier, energizing variation. The three layers pack in different flavours and textures and can be easily adapted, depending on what's in your cupboard. Best of all, with 4 tbsp of our Super-Cacao powder, these slices are super-fuelled with antioxidants. 

Makes 12

INGREDIENTS: 

For the base:
1 1/2 cups oats
2 tbsp maple syrup
1 heaped tbsp coconut oil

For the caramel:
4 tbsp peanut butter
1 tbsp maple syrup
handful of raisins
2 tsp cinnamon

For the chocolate:
4 tbsp Aduna Super-Cacao Powder
2 tbsp coconut oil
1 1/2 tbsp maple syrup

METHOD:

For the base, place the oats into your food processor and blend until they are almost flour-like in consistency. Add the maple syrup and coconut oil and blend into a sticky mixture. Add more coconut oil or syrup if the oats aren’t sticking together enough. Pour the mixture into a baking dish and firmly press to create a smooth, even surface. Leave in the freezer to set.

Then, mix together all of the peanut butter caramel ingredients in a bowl and spread over the top of the base layer. Return this to the freezer while you make the chocolate layer.

Melt the coconut oil in a pan over a low temperature and mix this with the maple syrup and the super-cacao powder until completely smooth. Pour the chocolate over the caramel layer and place the slices back into the freezer for 2 hours to set.

Slice into squares- you may want to use a knife dipped in hot water to help avoid the chocolate layer cracking.
