Healthy Super-Cacao Nutella

As much as we love Nutella, we're not such a fan of all the sugar, oil and other unnecessary add-ins. We think the combination of hazelnuts and chocolate are a match made in heaven and don't need much else to really shine. Our healthy Nutella is made with a handful of ingredients, free from dairy and refined sugar - and we think it is even tastier than the original! Plus its packed with flavanols, protein, fibre, magnesium and potassium thanks to the Super-Cacao so it is a far more nutritious alternative.

2 tbsp Aduna Super-Cacao Powder
3 cups (approx. 400g) raw hazelnuts
2 tbsp maple syrup or honey*
1/2 tsp salt (optional)

*Note, the more sweetener you add, the thicker/stiffer the Nutella will be. 


Spread the hazelnuts in a baking tray in a single layer and roast for approx. 12 minutes (this releases the natural oils and loosens the skins, making them easier to blend into a butter).

Remove from oven and leave to cool slightly. Transfer to a large tea towel and use your hands to roll the nuts around and remove most of the skins. It doesn't have to be perfect but get as much as possible off as it makes for a creamier Nutella. 

Leaving the excess skins behind, add nuts to a food processor or high-powered blender and blend until very runny. This can take up to 10 minutes. 

Add the Super-Cacao Powder, maple syrup or honey and salt (if using) and blend again. It will thicken up at first but keep blending and it will smooth out.

Transfer to a jar and store at room temperature.
