These apricot, baobab and cherry tartlets make a great summer dessert or snack. They are also vegan, gluten-free and quick and easy to make.
Ingredients:
1 tbsp Aduna Super Cacao Powder
1/2 cup ground almonds
1/4 cup coconut flakes
5-6 medjool dates
1 tbsp maple syrup
1 tbsp melted coconut oil
For the filling:
1 tbsp Aduna Baobab Powder
1 cup fresh apricots
1 tbsp maple syrup
1 tbsp melted coconut oil
1/4 cup coconut cream
Method:
Combine all the ingredients for the base in a food processor and divide mixture between 8 tartlet moulds. Place into fridge to set.
If you want your tartlet bases to be a bit drier, take them out of the moulds and place into a dehydrator for a few hours. Time will depend on how dry you want them to be.
Blend all the ingredients for the filling until smooth. Pour mixture into your bases and return to the fridge to set. Finally, decorate with cherries and sprinkle with extra baobab powder.
