Baobab, Berry & Pear Cake

Sometimes nothing but cake will do! This fluffy Baobab, Pear & Berry Cake is a delicious treat, perfect for enjoying with a cup of tea or with a spoonful of coconut yoghurt for dessert. It's gluten-free, dairy-free and very low in sugar - so you can indulge totally guilt-free!

Ingredients:

1 tbsp Aduna Baobab Powder
1 1/4 cup gluten-free flour
1 tsp gluten-free baking powder
1/2 tsp gluten-free bicarbonate of soda
150g coconut oil, softened ( minus 1 tbsp for greasing)
1 pear or 2 if small
1/2 cup mixed berries
1 tsp cinnamon
1 tsp vanilla powder
2 tbsp honey
2 organic eggs
1 tbsp coconut sugar

Method:

Preheat oven to 170C and grease a 20cm round cake pan with coconut oil.

Slice pear, sprinkle with vanilla powder, coconut sugar and baobab powder and let it rest until your cake mix is ready.

Sift together flour, baking powder and bicarbonate soda.

In a separate bowl, beat eggs with coconut oil, honey and a pinch of salt.

Mix dry and wet ingredients until well combined. Pour the cake batter into prepared tin and top with berries and pear.

Bake for 25-35 minutes (An inserted skewer should come out clean when the cake is ready).
