Ingredients
- 1 can (400ml) full-fat coconut milk (chill overnight)
- 150g raw cashews (soaked in boiling water for 15 mins and drained)
- 80ml maple syrup
- 3 tbsp Aduna Super Cacao powder
- 120g dark chocolate
- 1 tsp coconut oil
- 30g pistachios (finely chopped)
Method
- Whizz the coconut milk, soaked cashews, maple syrup and cacao powder in a blender until completely smooth.
- Pour into silicone ice cream shaped moulds, add sticks, and freeze for 4+ hours until solid.
- Melt the dark chocolate and coconut oil together, then pour into a tall glass.
- Remove the set ice cream from the moulds, dip them into the melted chocolate and watch the shell harden instantly.
- Drizzle with extra melted chocolate and immediately sprinkle with the chopped pistachios.
- Enjoy straight away or pop back in the freezer for later!
