If drinking your greens isn't your thing (we get it, it's not for everyone) did you know you can add to your meals? Get creative in the kitchen and say hello to this tasty cornbread recipe that is guaranteed to satisfy your tastebuds.
Ingredients
For the cornbread:
- 2 tbsp Aduna Super Greens Blend
- 50g butter, plus extra for greasing
- 1 small onion, finely chopped
- 225g fine cornmeal
- 140g plain flour
- 2 tsp baking powder
- 1 tsp salt
- 400ml milk of choice mixed with a squeeze of lemon
- 2 eggs (or vegan alternative)
- 50g grated Parmesan cheese (optional)
- 4 tbsp chopped jalapeños
For the butter:
- 1 tbsp Aduna Baobab Powder
- 100g butter, softened
- ½ a lime, zest and juice
Method
- Preheat oven to 230°C. Grease a loaf tin with butter.
- Cook onions until soft and melt the butter.
- Add the dried ingredients; cornmeal, flour, baking powder, salt and Super Greens into a bowl and mix.
- In another bowl, add the wet ingredients; eggs, melted butter, onions and jalapeños.
- Combine wet and dry mixtures to form a batter. Pour into tin and bake for 25 mins until golden and a skewer comes out clean.
- For the lime butter, mix the ingredients into a small bowl. Spread on toasted cornbread.
