Fonio & Rose Cookies

These fonio and rose cookies are simply delicious. Packed with nutrients and free from refined sugar, they are easy to make and a real crowd pleaser. Serve with an Aduna Super Tea, of course!

Ingredients

For the cookies:

  • 1 cup cooked Aduna Fonio Super Grain
  • ¾ cup almond flour
  • 3 tbsp oat flour
  • 4 tbsp melted coconut butter or coconut oil
  • 4 tbsp coconut sugar
  • 1 vegan egg
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • 1 tbsp rose water
  • ½ tsp vanilla extract

To garnish:

  • Almond flakes
  • Dried rose petals

Method

  1. Preheat oven to 180°C and line a baking tray.
  2. Blend the cooked Fonio Super Grain in a blender for a couple of minutes, until it resembles flour.
  3. Combine all ingredients in a bowl and mix well.
  4. Using a small ice cream scoop or large spoon, form 12 small balls and place on the lined baking tray.
  5. Flatten each ball, then sprinkle with almond flakes and rose petals.
  6. Bake for 15-18 minutes or until golden brown.
  7. Allow to cool before serving.
