These fonio and rose cookies are simply delicious. Packed with nutrients and free from refined sugar, they are easy to make and a real crowd pleaser. Serve with an Aduna Super Tea, of course!
Ingredients
For the cookies:
- 1 cup cooked Aduna Fonio Super Grain
- ¾ cup almond flour
- 3 tbsp oat flour
- 4 tbsp melted coconut butter or coconut oil
- 4 tbsp coconut sugar
- 1 vegan egg
- ½ tsp baking soda
- ¼ tsp baking powder
- 1 tbsp rose water
- ½ tsp vanilla extract
To garnish:
- Almond flakes
- Dried rose petals
Method
- Preheat oven to 180°C and line a baking tray.
- Blend the cooked Fonio Super Grain in a blender for a couple of minutes, until it resembles flour.
- Combine all ingredients in a bowl and mix well.
- Using a small ice cream scoop or large spoon, form 12 small balls and place on the lined baking tray.
- Flatten each ball, then sprinkle with almond flakes and rose petals.
- Bake for 15-18 minutes or until golden brown.
- Allow to cool before serving.
