Baobab Caribbean Paella

Aduna Baobab Caribbean Paella Recipe

Baobab's citrusy flavour means it adds a vibrant zingy flavour to everything it touches. We love it in smoothies, desserts and breakfast foods but it's great in savoury dishes too. Try this Caribbean-style Baobab paella and add a superfood twist to your dinner!

Serves 2

3 tbsp Aduna Baobab Powder
2 small onions, chopped
1 red pepper, chopped
3 cloves garlic, minced
1 tsp dried oregano
1 tbsp smoked paprika
2 tsp turmeric
250g paella rice
1 litre fish or vegetable stock
100g peas, defrosted
1 small tin tuna (optional)

Melt the coconut oil in a large frying pan, add the pepper, onion and garlic and sauté until softened.

Stir in the herbs, spices and Baobab powder. Add rice and stock, cover and simmer gently for 20 minutes, stirring from time to time.

Stir through the tuna (if using) and peas. Cover and cook for a further 5 minutes. Serve with a green salad.
