Super-Cacao Banana Healthy Ice Cream
Chocolate ice cream you can eat for breakfast? Count us in! If you haven't discovered the healthy banana ice cream trick, you're missing out. This simple but utterly delicious recipe requires just frozen bananas and a blender or food processor to make the healthiest ice cream alternative out there. 2 tbsp Aduna Super-Cacao Powder
1-2 pitted medjool dates
2 tbsp almond/soya/oat milk
1 tbsp cacao nibs (optional)
The day before you want your ice cream (or at least 8 hours in advance), peel, chop and freeze the bananas in a small container or freezer bag. When you are ready to make the dish, place the bowl you will be serving the ice cream in into the freezer. This will prevent the ice cream from melting while you eat it.
Add the chopped bananas to a strong blender or food processor and blitz until they resemble a crumb-like mixture that is just starting to form a smoother texture. At this point, add the medjool dates, cacao powder and preferred milk then blend again until they combine and form a smooth, creamy ice cream.
If using them, stir the cacao nibs through the ice cream, then transfer everything into the cooled bowl and sprinkle over your favourite toppings. Some of ours are: desiccated coconut, chopped nuts, fresh berries, nut butter and coconut cream!
