          Moringa-Avocado Potato Salad

          Aduna Moringa Avocado Potato Salad Recipe

          Potato salad is a popular side-dish at summer barbecues but usually made with lots of mayonnaise and not the healthiest option...This moringalicious twist on the classic from Aduna Triber Kaja uses avocado to make a creamy sauce that's even tastier than the original - and much more nutritious!

          Serves 2

          Ingredients:

          1-2 tsp Aduna Moringa Powder
          4 cooked potatoes
          1 avocado
          3 cm leek or spring onions, chopped
          A handful of baby leaf salad/rocket
          Coriander
          Pink Himalayan salt
          Black pepper
          Pumpkin seeds

          Method:

          Chop the potatoes into chunks, to your preference.

          In a blender, or with a fork, mix together the avocado flesh, moringa powder, black pepper and pink Himalayan salt.

          Toss the potatoes with the avocado mixture. Add the baby leaves, fresh coriander, chopped leek or spring onions. Toss again.

          Sprinkle with pumpkin seeds before serving.
