Moringa & Avocado Noodles

Courgette noodles or "courgetti" are a fantastic replacement for pasta when you're after something a little lighter, and as they're grain-free, they're a good option if you're sensitive to gluten or grains. You can eat them raw, as in this recipe, or sauté them until soft.

Ingredients:

1/2 tsp Aduna Moringa Powder
2 courgettes
1/4 cup pomegranate seeds
1 avocado
juice of 1 lemon
1 tbsp olive oil

Method:

With a spiralizer, turn your courgettes into noodles. If you do not have a spiralizer and are desperate to make these, then use a peeler to turn the courgettes into wide noodles.

To make the sauce, blend together the avocado, lemon and olive oil until smooth. Season to taste.

Mix the courgette noodles with the sauce and scatter with pomegranate seeds.

Toasted pine nuts are a nice addition too.
