Peanut Butter & Baobab Jam Sandwich

Ever tried baobab in your sandwich? Here's how! Aduna Feel Good Triber Maddie gives the classic PB & J a major upgrade with a sugar-free baobab-berry jam, almond butter and nutritious wholegrain bread. 


2 tsp Aduna Baobab Powder
2 slices of bread (I used 100% whole grain Ezekiel bread)
1/2 cup fresh or frozen raspberries (blueberries or blackberries would also work)
1 tbsp chia seeds
1/2 banana for layering (or more)
1-2 tbsp almond butter (I use homemade roasted almond butter)
sprinkle of cinnamon
1 tsp coconut oil


Toast bread until golden.

While bread is toasting, heat the raspberries in a small pan until you can mash them easily with a fork.

Remove from heat and stir in chia seeds and baobab powder. Leave for a few minutes to thicken.

Spread one slice of bread thickly with almond butter, sprinkle with cinnamon and arrange the banana slices on top. Spread the other slice thickly with the berry-baobab jam. Sandwich the two slices together. 

Heat a frying pan over low-medium heat and add the coconut oil. Set your sandwich down in the hot pan and warm through for 1 minute before flipping and cooking for a further minute or two.
