Cheesy Moringa Kale Chips
The word "chips" doesn't usually make us think "healthy snack" but these are chips with a difference! One of our favourite leafy greens, kale, gets coated in a dairy-free, cheesy coating and dehydrated until crisp to make a crunchy and totally moreish savoury snack. You won't miss Walkers!
1/4 tsp Aduna Moringa Powder
1 large bunch of kale, washed & spun, de-stemmed and chopped into bite-size pieces
1 cup cashews, soaked for 2 hours
1 red bell pepper, de-seeded and chopped
3-4 tbsp lemon juice
1 tbsp agave nectar/maple syrup/honey
2 tbsp nutritional yeast
1/4 tsp onion powder
1/2 tsp Himalayan sea salt
Add all the ingredients, except the kale, to a high-powered blender and blend until smooth.
Add kale to a large bowl and pour over the blended mixture.
Mix well using your hands to ensure the leaves are well coated. Spread the kale evenly on dehydrator trays, making sure to leave plenty of space to allow them to dry properly.
Dehydrate at 118F overnight or until coating is dry and kale chips are crisp. You may need to dehydrate them for longer to get them totally crisp.
Leave them to cool completely before storing in an air-tight container.
