Baobab Flapjacks

A flapjack is often a ‘go-to’ snack for the average active person but though the traditional kind might be energy dense, they're usually full of refined sugar and fat. These flapjacks are sweetened with fruit only and are made with almond butter, nuts and seeds to make them a great source of protein and healthy fats. Easy to make, nourishing and utterly delicious! 

Serves 12

Ingredients: 

2 tbsp Aduna Baobab Powder
2 cups Medjool dates
2 cups water 
1 cup almond butter 
3 cups oats 
1 cup cashews
1 cup sunflower seeds

Method:

Preheat the oven to 160C.

Start by adding the dates and water to a saucepan, bring to the boil and simmer until soft. Set aside.

Add all the dry ingredients - oats, nuts and seeds to a food processor and pulse until roughly chopped. Pour the dry mix into a large mixing bowl.

Add the date mixture and baobab to the same food processor and blend until smooth. 

Pour into the mixing bowl with the dry ingredients and stir well with a wooden spoon until thoroughly mixed and all of the dry mix is coated. 

Add the water, baobab and dates to your blender or food processor and blend until you have a smooth syrup. 

Spoon into a baking pan, lined with parchment paper. The mixture should be approx.1" high. Place in the preheated oven and bake for 20-25 minutes.
