Gluten Free Banana Bread with Baobab Love

When we have extra ripe bananas we usually pop them in the freezer for super-charged smoothies and shakes but banana bread is another great option and can absolutely be healthy. This recipe from Aduna Triber Ania is gluten-free, refined sugar-free and packed with baobab love. Try it toasted and topped with peanut butter for the most delicious breakfast!

Serves 10

Ingredients:

3 tbsp Aduna Baobab Powder
100g coconut oil, melted
4 tbsp coconut sugar 
3-4 medium ripe bananas
2 large eggs
1/2 tsp vanilla powder (optional)
pinch of cinnamon
250g plain, gluten-free flour 
2-3 tsp gluten-free baking powder

Method:

Preheat your oven to 160C and grease a loaf tin with a little coconut oil.

Mash the bananas with a fork or blitz in a blender. 

Separate eggs, adding the yolks to the banana, along with the baobab powder, flour, vanilla, sugar, cinnamon and baking powder. Stir until well combined. 

Whisk the egg whites with an electric whisk until light and fluffy, then gently fold into the banana bread batter. 

Pour into your prepared tin and bake for 45-60 minutes, or until an inserted skewer comes out clean.
