Moringa Veggie Bread

We don't typically think of bread as being particularly nutritious, just a delicious vehicle for toppings and a way of satisfying our carb cravings! This bread, however, is full of ingredients your body will thank you for. Vegetables, seeds, nuts and protein-rich eggs make it a fantastic way to fuel up at breakfast or any time of the day. Not forgetting the moringa, which is a great source of vitamins, minerals antioxidants, protein and fibre.  

Ingredients:

1 tsp Aduna Moringa Power
1 cup buckwheat flour
3 carrots, grated (approximately 1 1/2 cups)
1 tbsp flaxseed
1/2 cup cooked ,mashed sweet potato
1/4 cup + 1 heaped tbsp almond flour
1/2-1 tsp cinnamon (optional, but nice for a sweeter-tasting bread)
1 tsp baking powder
1 tbsp mixed seeds (we like sunflower and pumpkin)
1/4 cup melted coconut oil
3 eggs, whisked
salt and pepper, to taste

Method:

Preheat the oven to 200C (180C fan oven) and line a loaf tin with parchment paper or lightly grease with coconut oil. 

In a large mixing bowl, stir together the buckwheat flour, carrots, flaxseed and sweet potato. Stir in the whisked eggs, followed by all the remaining ingredients. Pour the mixture into the prepared tin, sprinkle with extra seeds if desired, and place in the oven for 40-50 minutes. It is cooked when a skewer comes out clean.

Serve with your choice of toppings, sweet or savoury! Some of our favourites are: coconut oil, honey, almond butter, hummus or avocado.
