Chocolate-Peanut Butter Mousse With Warm Baobab Berry Jam


Some days we need a sweet treat but don't want to wait around for cakes to bake or cheesecakes to set...plus we want to keep things healthy! This 15-minute dessert from Aduna Feel Good Triber Ania is just the thing. Creamy chocolate-peanut butter mousse gets layered up with a baobalicious berry jam and crispy quinoa puffs to hit all our cravings on the head. 

Serves 1-2

INGREDIENTS:

For the mousse:
1/2 ripe avocado
2 tbsp cacao powder
1 ripe banana
2 tbsp of almond milk (or any other non-dairy milk)
1 tsp maca powder
2 tbsp peanut butter
pinch of himalayan salt

For the berry jam:
1 tbsp Aduna Baobab Powder
1 cup of mixed berries
2 tbsp coconut oil
1 tbsp of coconut nectar ( or sweetener of your choice)
1 tbsp of chia seeds
juice of 1/2 lemon  

whole grain or quinoa puffs

METHOD:

Add all the ingredients for the mousse to a high-powered blender and blend until everything is smooth. Set aside.

For the jam, melt the coconut oil in a small pan then add the berries, sweetener and lemon juice. Simmer for 10 minutes, stirring from time to time. Remove from the heat and mix in the chia seeds and baobab powder. Leave to cool for a few minutes before layering up in a glass with the mousse and quinoa puffs.
