Moringa & Strawberry Muffins with Basil

Why do we love muffins? These little beauties from Feel Good Triber Natalia Nekrasova prove why. They're yummy, easy to make, portable, and endlessly adaptable to taste and nutrition preferences. These muffins are packed with protein from the quinoa flour and Moringa and the strawberry-basil flavour combination screams "Summer!"

Dry ingredients:
1 1/2 tsp Aduna Moringa Superleaf Powder
1 cup quinoa flour (you can also use spelt flour)
1 tsp baking soda
1/4 tsp baking powder
1 Tbsp soy lecithin powder (optional)
Wet ingredients:
3/4 cup raw coconut sugar
1/4 cup melted coconut oil
1/2 cup coconut yogurt (you can use natural yogurt)
2 Tbsp flaxseed meal mixed with 6 Tbsp water (leave for 20-25 min) - substitutes 2 eggs

1 cup chopped strawberries
1 Tbsp fresh basil

Preheat oven to 180 degrees.
Combine all dry ingredients in a bowl and set aside.
Blend all the wet ingredients in your blender / food processor until smooth. Add the wet to dry and mix well.
