Moringa & Strawberry Muffins with Basil

Why do we love muffins? These little beauties from Feel Good Triber Natalia Nekrasova prove exactly why. They're delicious, easy to make, portable, and endlessly adaptable to different taste and dietary preferences. These muffins are packed with protein from the quinoa flour and moringa and the strawberry-basil flavour combination screams "summer!"

Makes 12 muffins


Dry ingredients:
1 1/2 tsp Aduna Moringa Powder
1 cup quinoa flour (or spelt flour)
1 tsp baking soda
1/4 tsp baking powder
1 tbsp soy lecithin powder (optional)
Wet ingredients:
3/4 cup raw coconut sugar
1/4 cup melted coconut oil
1/2 cup coconut yogurt (or natural yogurt)
2 tbsp flaxseed meal mixed with 6 tbsp water (leave for 20-25 min) - substitutes 2 eggs
1 cup chopped strawberries
1 tbsp fresh basil


Preheat oven to 180'C.

Combine all dry ingredients in a bowl and set aside. Blend all the wet ingredients in your blender / food processor until smooth. Add the wet to dry and mix well. Add the strawberries and basil to the mixture and stir gently to incorporate.

Pour the batter into muffin moulds and bake for 15-20 min. Leave to cool before decorating with fresh strawberries.
