Baobab Overnight Oats with Peach & Blackberry Compote
Prepare for some serious breakfast envy! As well as making the best grab and go option, these super-charged, layered overnight oats by Feel Good Triber Rachel are a breakfast favourite. Soaking in layers of delicious, fruity goodness, these oats are bursting with flavour and immune-boosting ingredients.
2 heaped tsp Aduna Baobab Powder
1/2 cup unsweetened plain almond milk
3/4 tbsp chia seeds
2 tbsp almond butter (smooth or crunchy)
1 tbsp maple syrup (or coconut sugar)
1/2 cup (45g) steel cut or rolled oats
1/2 tsp vanilla bean paste (optional)
1 small, ripe peach
1/4 tsp cinnamon
1 tbsp maple syrup
1 small handful of blackberries
2 tbsp maple syrup
To make the peach compote: combine the ingredients in a blender and blend until smooth. Transfer to a small bowl and leave to one side whilst you repeat with the blackberries.
Place the almond milk, chia seeds, peanut butter, maple syrup, vanilla (if using) in a large bowl and stir to combine.
Add oats and stir again, then press down with a spoon to make sure all oats have been covered and are soaked in almond milk.
Layer the oats and fruit compotes in 2 mason jars, alternating between oats, peach and blackberry compotes.
Cover securely with a lid and place in the fridge overnight (or for at least 6 hours).
The next day, open and enjoy!
Overnight oats will keep in the fridge for up to 2 days, though are best within the first 12-24 hours.
