Moringa Summer Salad

There's nothing better than a fresh summer salad when the weather is nice. Packed with summer veggies, flavour and texture, this is one of favourite light meals to whip up in no time. Adding moringa to the dressing is a great way to get an extra dose of nutrients, plus the vitamin C in the lemon juice will aid the absorption of iron in the moringa...double whammy! 

Serves 1 


For the salad:
1 cup butter beans
1 cup kale
1 cup tomatoes, chopped
1 cup cucumber, finely diced 
1 cup red onion, finely chopped
2 garlic cloves, finely chopped
3 Medjool dates, finely chopped
small handful mixed olives 
1/2 green chilli
fresh coriander, chopped
salt + pepper to taste

For the dressing:
1 tsp Aduna Moringa Powder
1 garlic clove, finely chopped
1 lemon, juiced
3 tbsp extra virgin olive oil


Place all the salad ingredients in a bowl and gently mix. 

In a separate bowl, whisk together the dressing ingredients until fully combined. Transfer the salad to a plate and fold in the dressing.
