
Mango, Baobab & Coconut Sago Dessert
Need some inspiration for a healthy dish this Chinese New Year? Well, we have just the answer for you! This exotic, fruity bowl of goodness comes from Nikita Leung, a health food blogger from Hong Kong who tells us that this her healthy reinvention of a traditional Chinese dessert.
Serves 4
Ingredients:
3-4 tsp Aduna Baobab Powder
3-4 mangoes, pitted
300ml coconut milk, canned
1/3 cup sago
pomelo, chopped
2-3 tablespoon coconut sugar (optional)
Method:
Soak the sago in water for 15 minutes, then drain. Boil water in a saucepan and add the sago. Cook and stir the sago for 5-10 minutes.
Turn the heat off, cover the saucepan with a lid and leave to sit for 15-20 minutes. The sago will look translucent when cooked.
Drain and rinse under cold water.
Blend the mangoes (reserving 1 to dice and stir in at the end), baobab, sugar (if using) and coconut milk.
Mix the sago, cubed mango and pomelo into the mango-coconut milk puree.
Chill in the fridge for an hour.
